Our first estate-grown Chardonnay is made from two French clones (76 and 95), and was fermented slowly at 15⁰C to preserve the grape’s natural aromatics. The wine shows incredible citrus, green apple, pear and mineral notes with a subtle touch of vanilla that comes from aging in 25% new French oak puncheons. We stirred the lees during and after fermentation, and performed a light fining before bottling. On the nose and palate, lemon, green apple, and lovely hints of vanilla and mineral notes prevail. A true cold climate Chardonnay, this wine offers a beautiful, refreshing, crisp acidity and surprisingly long finish – at 12% alcohol/volume, it is an ideal, food friendly wine on a hot summer’s day, and pairs well with salads, cheeses, and shellfish.
